COMPLEX EXECUTIVE CHEF 

MINIMUM REQUIREMENTS
1. Diploma in hotel management/culinary arts.
2. 10 years experience in the Kitchen
3. Minimum of 5 years experience as an executive chef in a 5 star hotel/operation.
4. Must have all round knowledge of food preparation, portion controls, costing and knowledge of menu planning.
5. Must have knowledge of ordering, receiving, issuing and storing procedures.
6. Must have knowledge of financials
7. Must have knowledge of Fidelio back office, excel and word.
B. Must posses good management skills

9. Good communication skills. 

MAIN DUTIES AND RESPONSIBILITIES
1. Assume full responsibility of the main kitchen, GICC kitchen and MetCourt Inn kitchen.
2. Maintain the highest level of standards in the preparation of food items as well as the service of the food.
3. Ensure that during times there is sufficient monitoring of operations.
4. Check that all personnel under him/her perform their duties in accordance with their job description. Ensure training is carried out, keeping training records and set training programs
5. Plan menus, costings, training and implementation of new menus.
6. Assume responsibilities, help to maintain or improve standards, create good working conditions and motivate staff
7. Responsible for delegating responsibility, orientating staff, training kitchen team, organising efforts and achieving the maximum from the kitchen team.
8. Control staff and set staff levels, to control wastage, portion control and spoilage control.
9. Control work rosters, food percentages as well as proper use of equipment.
10. Be aware of all health and safety procedures
11. Compile HR month end report
12. Controlling payroll costs through the maintenance of proper records, rosters, time books etc.
13. Control production costs
14. Must know all equipment within the kitchen, how they operate, ensure service and cleanliness
